Las rutas gastronómicas en el departamento del Meta. Una propuesta de sustentabilidad turística (Gastronomic Routes in the State of Meta: A Proposal of Tourist Sustainability)

Abstract

Spanish Abstract: El presente artículo está distribuido de la siguiente manera: primeramente, se define el tema central de la investigación –el concepto de turismo gastronómico–, se contextualiza el turismo gastronómico a nivel nacional y regional, y se menciona su importancia para la economía y la cultura. Seguidamente, se hace una breve explicación del perfil del turista gastronómico y de sus clases, de acuerdo con la bibliografía consultada. Luego se detallan tres rutas turísticas existentes en el departamento del Meta, se enlistan los festivales y las jornadas gastronómicas que se llevan a cabo a lo largo del año; además, se mencionan y describen los platos típicos de la región llanera. Así mismo, se realiza un análisis DOFA y se plantea la construcción de una ruta gastronómica con unos pasos que se ponen en consideración. Finalmente, de acuerdo con unas encuestas aplicadas, se presentan los resultados y las conclusiones respectivas.

English Abstract: This document is distributed as follow, firstly define the main subject of the research, the concept of gastronomic tourism, and contextualized gastronomic tourist at national and regional level, mentioning it´s importance for the economy and culture, then it explains about the profile and gastronomic tourist classes in accordance with the researched biography, next it mention 3 touristic routes in Meta department listing fairs and gastronomic days that take place during the year, also it mention and describe the typical dishes from the region, likewise a DOFA analysis is carried out, the construction of a gastronomic route is proposed with steps of consideration and finally in accordance with a applied surveys, results and respective conclusions are presented.
