Abstract
This article seeks to provide a first approximation to the precautionary principle, in its origin and slow maturation process, to explain how today is attributed to the same two essential elements: a constant that refers to the fact that it is a situation of uncertainty the existence of a risk of serious and irreversible damage and a requirement of premature action, proportionate and suitable to prevent damage suspected. Well delineated, the first born in the land of the environment and then extends to the field of public health and nutrition, makes his encounter with liability, encounter that still has unclear consequences.
