A Comprehensive Evaluation of Milk Protein Molecular Weight Distribution Based on Gel Filtration Chromatography Dataset

Abstract
Molecular weight is one of the main characteristic parameters of proteins, which is the basis for the study of characteristic parameters such as protein homogeneity, aggregation state and protein-protein interaction. This research aims at establishing the molecular weight distribution pattern of milk protein based on gel permeation chromatography in order to analyze the differences between different types of milk and guide infant formula development. After verification, the established detection method is accurate. The molecular weight distributions in the samples were determined using this method, and the overall differences in the protein molecular weight distributions of human milk, bovine milk and infant formula were compared. Principal component analysis and orthogonal partial least-squares discrimination analysis was then applied to analyze the difference of protein molecular weight between human milk and bovine milk, to find out the desired fortified target and its content, and to provide reference for the improvement of infant formula.
