Background: Before the COVID-19 outbreak, food microbiology already played a crucial role in identifying and preventing foodborne pathogens such as Salmonella and E. coli. However, the pandemic further highlighted the significance of this discipline by emphasizing the need for increased surveillance and microbiological control in the food chain to prevent future global public health threats. The primary objective of this research was to enrich knowledge management in the field of Bioeconomy, specifically concerning the productive pathway of Eco-Intensification and biotechnology applications that directly impact food microbiology and its correlation with the Covid-19 crisis. Methodology: To achieve this, an exhaustive literature review was conducted, grounded in the epistemological principles of bioeconomy. This knowledge stream has played an essential role in the development of the eco-intensification sector and biotechnology applications in food safety and nutrition microbiology, utilizing tools provided by Bioeconomy. Results: The findings of this investigation underscore the relevance of comprehending both the social and economic impact of microbiological activity in food intake, adopting a perspective rooted in Bioeconomy. Additionally, recommendations are formulated for decision-makers to enhance the public agenda from a bioeconomic perspective. Conclusion: These recommendations aim to bolster the focus on Bioeconomy and strengthen the understanding and management of the interaction between food microbiology and the challenges posed by the Covid-19 pandemic.
