Multiresistant Probiotic Lactobacillus Plantarum Nj1007 Screened from Luzhou-Flavor Liquor Fermentation

Abstract
Lactiplantibacillus plantarum is recognized for its biosafety, environmental friendliness and immune function enhancement, despite it being sensitive to the animal digestive tract and storage environments. In this study, A strain of L. plantarum was screened from fermented wine spirit using the diluted coated plate method, and the strain was named Lactobacillus plantarum NJ 1007. The probiotics and tolerability of L. plantarum NJ 1007 were evaluated in vitro, and the microencapsulation conditions were studied. The results showed that L. plantarum NJ 1007 was identified which showed tolerance to simulated digestion conditions and ability to inhibit the growth of Several pathogenic bacteria. Moreover, Microencapsulation of L. plantarum NJ 1007 was increased the likelihood of survival under storage for 90 days at 4 °C or room temperature. Furthermore, The results of animal experiments show that L. plantarum NJ 1007 embedded in microcapsules could colonize mice intestinal tract and inhibit E. coli.
